Healthy recipe for Christmas

Looking for a healthier ‘sweet treat’ to serve at your next festive function? Then these three recipes from the BUF Girls in Bondi are for you!

  • 3 ripe bananas
  • 1 cup oats
  • 1/2 cup broken cashews
  • Optional: add vegan choc-chips or chopped dates

What to do

  • Preheat oven to 180 degrees
  • Line a tray with baking paper
  • Mash bananas in a bowl
  • Add oats and cashews
  • Add optional ingredient of choice (if you want to!)
  • Mix until all ingredients are well combined
  • Shape into cookies and bake at 180 degrees for 15 minutes
  • Allow to cool​​​​​​​





  • 60g almond meal, sieved + extra for rolling dough
  • 30g coconut oil, melted
  • 1/2 teaspoon vanilla powder
  • ¼ ground nutmeg
  • ¼ ground cinnamon
  • 2 teaspoons ground ginger
  • 50ml coconut milk
  • 1 egg yolk
  • ¼ teaspoon baking powder

What to do

  • Combine all of the dry ingredients, well
  • In a separate bowl, whisk all wet ingredients together, well
  • Gently fold the dry ingredients in to the wet until the two mixtures form a dough
  • Wrap this dough in glad wrap and place in the fridge for 1 hour
  • Pre-heat the oven to 180 degrees
  • Line a baking tray with baking paper
  • Lay a separate sheet of baking paper on to a flat surface and sprinkle with almond meal
  • Remove the dough from the fridge, unwrap and place on to the baking paper
  • Sprinkle the top of the dough with a little more almond meal
  • Place another sheet of baking paper over the dough and use a rolling pin to roll out the dough to 1/2cm thick
  • Using a gingerbread man cookie cutter cut out the gingerbread cookies and place directly on to the baking tray. You may need to re-roll off cuts as you go
  • If you find the dough becomes sticky, add more almond meal as you roll
  • Place in the oven for 10 – 15 minutes or until golden brown




  • 500g strawberries
  • 40g almonds
  • 40g pistachios
  • 5 pitted dates
  • 1/2 teaspoon cinnamon
  • 1 vanilla pod OR 1/2 teaspoon vanilla

What to do:

  • Pop your almonds, pistachios, cinnamon and three dates into a food processor and whizz up until you have a crumble like texture (if you don’t have a food processor at home, then just finely chop the nuts and dates by hand).
  • For the strawberry mix – take the vanilla pod, slice lengthways along the pod and use the knife to slide along the pod and remove the seeds. Halve 250g of strawberries and whizz them in the blender along with two fresh dates and the vanilla beans (or vanilla powder) until smooth.
  • Quarter the remaining 250g of strawberries and combine in a bowl.
  • Top with the crumble mix.
  • If you like it warm, heat gently on the stove, or in the microwave. You could also pop the whole thing in the oven and crisp the top a bit!​​​​​​​
